I would use the $25,000 to invest 10,000 of it into a savings account that builds interest so once my daughter grows up she will be set for college and a first vehicle without the need to get student loans! Most of tye rest to get her some new clothes, lots of formula as her special kind is very expensive, some diapers of course and some new toys.
